Mexican Goulash

Brown 1 1/2 lbs ground hamburger (drain off fat if too greasy)

1 1/2 teaspoons salt (may need more later)

1 teaspoon pepper

1 1/2 tablespoons chili powder (may need more…depends on individual taste)

1 medium onion (diced)

1 medium bell pepper, if desired

Add salt, pepper, onion and chili powder to browned meat.  Add 1 1/2 cups of rice, 1 can of tomatoes, 1 can brown beans (pinto or ranch style).  Add 2 cans of water.  Simmer and keep covered for about 15 or 20 minutes.  You may need to stir to keep it from sticking.  Also, if needed add a little more water.  Also, at this point, if you taste it and more salt, pepper or chili powder is needed, add to your taste.  If desired, take several tortillas and tear them up and stir in.  Sprinkle a little cumin powder and stir.  Servings may be topped with grated cheese and diced onion, if desired.
