Lasagna Soup

This is my favorite soup on a very cold day. It is hardy and warm.



  • 1 lb ground hamburger
  • 1 yellow onion, chopped
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1 (6 oz) box of lasagna noodles, crushed into large pieces
  • 1 small can tomato paste
  • 4 cups chicken broth
  • 1 (15 oz) can crushed tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese


Brown hamburger in large pot. Add in onion, and sauté until softened. Stir in all the remaining items except the cheeses. Bring to a boil, and then simmer until the lasagna noodles are soft. Stir mozzarella cheese in gently. Top with parmesan cheese before serving.
