Impossible Pumpkin Pie

This makes a great breakfast, just ask Joe G. (inside joke, but you can really ask him).  Put a little Cool Whip on it, and yummy!



  • 3/4 cup of sugar
  • 1/2 cup of Bisquick or (1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 cup of flour)
  • 2 tablespoons of butter
  • 1 can (13 oz) evaporated milk
  • 2 eggs
  • 1 (16 oz) can of pumpkin
  • 2 1/2 teaspoons of pumpkin pie spice
  • 2 teaspoons vanilla


Heat oven to 350°.  Grease pie plate.  Beat all ingredients until smooth (approximately 1 minute in the blender).  Pour into pie plate.  Bake until knife inserted in center comes out clean (50-55 minutes). To bake faster, put them in a muffin tin.
