Sopapillas

2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons shortening

3/4 cup hot water

Directions:

Combine flour, baking powder, and salt; cut in shortening. Add water, stirring with fork until blended.  Knead 10-12 times.  Place dough in plastic bag to rest for 20 minutes.  Roll dough to 1/8” thickness; cut dough into 3” squares.  Cut each square in half diagonally.  Heat oil in large pan.  Fry until golden brown.
