Burnt Sugar Cake

This was a family favorite.  We cannot figure out how she made it all by herself.  When Dottie and Jeanne tried later, it took both of them to manage it.  She would make it 7 or 8 layers high.  If you like a culinary challenge, try this cake.

Burn 1/2 cup sugar in a small pan until liquidized.  Then add 1/4 cup boiling water stirring it well – (cool).

Cream together 1 1/2 cups white sugar, 1/2 cup butter.  Add 3 egg yolks, 1 cup cold water, 2 cups flour, and beat batter for 5 minutes.  Next add egg whites well beaten, and 1/2 cup flour, 2 teaspoons baking powder, and add the burnt sugar.  Cook at 325.

Make icing in pan you burned the sugar in.  Add cup sugar, 1/2 cup cream, and 2 tablespoons butter.
