Senator Russell’s Sweet Potatoes

3 cups fresh sweet potatoes (approximately 3-4) boiled

1 cup sugar

1 tablespoon vanilla

1/2 cup butter, softened

pinch of salt

Mix thoroughly and pour into a buttered casserole dish.

Topping:

1 cup light brown sugar

1/3 cup flour

1 cup of pecans (chopped)

1/3 cup of melted butter

Mix with a fork and sprinkle on top.  Bake at 350° for 30 minutes.

Note – I usually double the topping.

If you like sweet potatoes (and I really really do), you have to try this recipe.  So good.  Karen brought it to the church’s Thanksgiving lunch.  I got the recipe from her, and I have been making it ever since.
