Senator Russell’s Sweet Potatoes

If you like sweet potatoes (and I really really do), you have to try this recipe.  So good.  Karen brought it to the church’s Thanksgiving lunch.  I got the recipe from her, and I have been making it ever since.

Ingredients

  • 3 cups fresh sweet potatoes (approximately 3-4) boiled
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 1/2 cup butter, softened
  • pinch of salt
  • 1 cup light brown sugar
  • 1/3 cup flour
  • 1 cup of pecans (chopped)
  • 1/3 cup of melted butter

Directions

Mash sweet potatoes, sugar, vanilla, 1/2 cup butter (softened), and salt. Pour into a buttered casserole dish.

Mix the remaining ingredients together with a fork and sprinkle on top.  Bake at 350° for 30 minutes.

Note – I usually double the topping.
