Rum Cake

Cake:

1 cup chopped pecans

1 golden cake mix

1 box vanilla pudding

4 eggs

1/2 cup rum

1/2 cup water

1/2 cup oil

Grease and flour Bundt pan. Sprinkle nuts on bottom. Mix dry ingredients. Add eggs and liquid. Beat for 3 minutes. Pour into pan. Bake at 325º for 50-60 minutes.

Glaze:

1 stick butter

1 cup sugar

1/4 cup water

1/4 cup rum

Mix glaze ingredients and boil for 3 minutes. Pour hot glaze over cake when it’s removed from oven. Leave in pan one hour, at least. Keeps well for days.

Back when Lydia was young and dumb, she decided that “Hot Buttered Rum” sounded really good. So, she and Lucas bought a big bottle of rum…”Hot Buttered Rum” is awful!! Since they then had a large bottle of rum they had no idea what to do with, Roxie was kind enough to give them this recipe. It is very good!
