Cajun Cake

2 cups flour

1 1/2 cups sugar

1/2 teaspoon baking soda

pinch of salt

1 can crushed pineapple

Mix all ingredients together by hand 1 minute.  Bake at 300 degrees for 40-45 minutes.

Icing:

1/2 stick of margarine

1 small can evaporated milk (5 oz.)

1 cup sugar

1 cup nuts

1 cup coconut

1 teaspoon vanilla

Cook margarine, milk, and sugar until thick.  Add other ingredients and put on warm cake.  Enjoy!
