King Ranch Casserole

This is a favorite Texas recipe that tastes even better heated up the next day!



  • 1 chicken, cooked and boned
  • 2 cups of grated cheddar
  • 1 dozen tortillas, sliced
  • 1 onion, finely chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup of chicken broth
  • 1/2 cup Ro-Tel tomatoes


In a bowl, mix chicken soup, mushroom soup, chicken broth and tomatoes.  Set aside.  In a 9×11 inch pan, layer chopped chicken, half of the soup mixture, half of the sliced tortillas, half of the onions and half of the cheese.  Repeat layers.  Bake for 1 hour at 350°.
