Salerno’s Salad (Our Version)

1 large head romaine lettuce, chopped

1 (8 oz) package of fresh mushrooms, sliced

1 cup mozzarella cheese. shredded

1 can black olive, sliced

1 cup celery, thinly sliced


2 tablespoons mayo

2 tablespoons red wine vinegar

1 garlic clove

1/2 teaspoon dried oregano

1/4 cup plus 2 tablespoons Extra Virgin Olive Oil

salt and pepper to taste

In a large bowl, toss the salad ingredients.

Mix all ingredients of the dressing together well. I usually do this in a jar, but you can also use a smaller bowl.

Pour dressing on salad mix, and toss to cover. Do this right before serving.
