Crab Quiche (Individual)

2 large eggs

1/2 cup mayonnaise

1/2 cup whole milk

2 tablespoons flour

1/4 teaspoon salt

1/2 teaspoons sriracha sauce

1 cup shredded swiss cheese

6 oz lump crab meat (can also use imitation crab)

4 whole scallions, diced

Preheat oven to 375. Coat a muffin tin wit cooking spray.

In a bowl, mix together all the ingredients. Evenly distribute the mixture between the muffin cups.

Bake until edges are puffed and they look set, approximately 20-25 minutes.

Let stand 10 minutes before serving.

These are great for breakfast on the go. They also reheated well, even from the freezer.
