Crab Quiche (Individual)

These are great for breakfast on the go. They also reheated well, even from the freezer.


  • 2 large eggs
  • 1/2 cup mayonnaise
  • 1/2 cup whole milk
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/2 teaspoons sriracha sauce
  • 1 cup shredded swiss cheese
  • 6 oz lump crab meat (can also use imitation crab)
  • 4 whole scallions, diced


Preheat oven to 375. Coat a muffin tin with cooking spray.

In a bowl, mix together all the ingredients. Evenly distribute the mixture between the muffin cups.

Bake until edges are puffed and they look set, approximately 20-25 minutes.

Let stand 10 minutes before serving.
