Banana Chocolate Chip Muffins

These muffins are on our school breakfast rotation. The kids love them, and they keep well too.



  • 1 stick butter, softened
  • 2/3 cup sugar
  • 2 large eggs
  • 3 bananas, (very ripe works best)
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips


Preheat oven to 350. Spray a muffin tin with cooking spray, or insert cupcake liners.

In a mixing bowl, cream together butter and sugar. Add eggs.

Add bananas and vanilla and mix until blended.

In a separate bowl, whisk together dry ingredients (flour, baking soda and salt).

Mix the dry ingredients into wet ingredients until incorporated.

Gently stir in chocolate chips.

Divide batter evenly into your 12-count muffin tin. Bake for 18-20 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
