Homemade Mayonnaise

1 whole egg

2 teaspoons vinegar

1 teaspoon water

1/2 teaspoon salt

1/2 teaspoon sugar

1/4 teaspoon lemon or lime juice

1 cup oil (options…vegetable, avacodo, grapeseed, etc.)

Put all ingredients into a jar. Using an immersion blender, start at the bottom, and slowly raise the blender toward the top of the jar. You should see the ingredients transform to mayo right before your eyes!
