Oatmeal Macaroons

1 cup shortening (don’t use butter)

1 cup brown sugar

1 cup white sugar

1 teaspoon vanilla

2 eggs

1 1/4 cups flour

1 teaspoon soda

3 cups oatmeal

1/2 cup nuts, chopped

1 teaspoon cinnamon

1 cup coconut

Cream shortening and sugars, add vanilla and eggs.  Beat thoroughly, add dry ingredients.  Roll into balls and dip in sugar or drop by spoonfuls and sprinkle top with sugar.  Bake at 350.  Can add any kind of nuts, or  chocolate chips, butter brickle or peanut butter chips etc.
