Harvard Beets

I have very fond memories of eating these as a child.  A few years ago, I thought about them, and I asked my mom for the recipe. I love them just as much now as I did then.  Beets are not everyone’s thing, but this recipe is great.



  • 1 can beets, drained
  • liquid from beets
  • 2 tablespoons corn starch
  • 4 tablespoons butter
  • 1/4 cup vinegar
  • 1/2 teaspoon salt
  • 4 tablespoons sugar


Mix all ingredients (expect for the beets) together and microwave in 1 minute intervals.  Stir between each microwave minute.  Stop when mixture thickens. Add the beets in, and microwave for another 2 minutes.
