Blueberry Muffins

Grandma loves blueberries! She has made these wonderful blueberry muffins for as long as I can remember. They are so delicious, especially with fresh Missouri grown blueberries.

Ingredients

  • 2 cups flour
  • 2 tablespoons baking powder
  • 1/2 cup sugar
  • 1 stick of butter, melted
  • 1 egg, slightly beaten
  • 3/4 cup whole milk
  • 1 1/2 cups fresh blueberries
  • 1/2 cup granulated sugar (brown or white)

Directions

Preheat oven to 350. Grease a 12-cup muffin tin.

In a bowl, combine the first three dry ingredients. In another bowl, combine the next three wet ingredients. Pour the wet ingredients into the dry ingredients, stir until just combined. Do not beat or over mix (it can be lumpy). Gently fold the blueberries into the batter. Spoon the batter into the muffin tray, filling each cup 2/3 full.

Bake for 10 minutes and remove from oven. Sprinkle tops of the muffins with sugar and return the muffins with sugar and return the muffins to the oven to bake for an additional 10 to 15 minutes.
