Bean Soup

1 small bag of northern beans (or 2-3 cans of northern beans already cooked)

1 can of chicken broth

1/2 lb chicken, cooked and diced

2 carrots, peeled and diced

1 large can of yellow hominy

1-2 cans of Ro-Tel tomatoes (depending on how much spice you like)

1 package of taco seasoning

Cook beans according to directions on package, or open cans. Once beans are cooked, add chicken, broth, hominy, Ro-Tel and taco seasoning. Put the carrots in a small microwave safe bowl and cover with saran wrap. Cook the carrots in the microwave until soft and then add to the soup. I like this soup with sour cream!

I didn’t think that I would like hominy, but in this soup I love it! It is also one of Owen’s favorites. The best part about this soup is that it is so forgiving. The amounts in the recipe are merely suggestions.
