Strawberry Shortcake

There are many different strawberry shortcake recipes. This is a good one. This dessert always reminds us of David’s Grandpa S. He had strawberry shortcake every year for his birthday.

Biscuit Ingredients

  • 1 1/2 cups flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2/4 teaspoon salt
  • 1/3 cup butter, cold
  • 1/2 cup sour cream
  • 3 tablespoons milk
  • 1 large egg
  • 1/2 teaspoon vanilla

Biscuit Directions

Preheat the oven to 400.

Add flour, sugar, baking powder, baking soda, and salt to a medium bowl. Whisk to combine. Cube cold butter and add to the flour mixture. Rub the butter into the flour until coarse crumbs form. Work quickly so the butter doesn’t melt.

In small bowl, mix egg, sour cream, milk, and vanilla. Beat to combine. Add wet ingredients to the dry bowl. Mix until a wet dough is formed. Scoop the dough a baking sheet. This recipe will give you 8 shortcakes. Bake 13-15 minutes. Remove from the oven and transfer shortcakes onto a wire rack to cool completely.

Strawberry Ingredients

  • 1 lb fresh strawberries
  • 2 tablespoons sugar

Strawberry Directions

Cut off the tops of the strawberries and slice the berries. Toss with 2 tablespoons granulated sugar. Refrigerate until ready to use or at least an hour before serving.

Whipped Cream Ingredients

  • 1 cup heavy whipping cream
  • 2 tablespoons sugar

Whipped Cream Directions

Add heavy whipping cream and sugar to a small mixing bowl, then use your hand mixer on medium-high speed until it forms stiff peaks. You can also mix this by hand with just a whisk, but you better have strong arm muscles.

Assemble the Strawberry Shortcake

To assemble the shortcakes, cut the shortcakes in half like a burger bun with a serrated knife. Stack the shortcake, strawberries and cream however you would like. It all tastes amazing!
