Russian Tea Cakes

These are a favorite in my family. Growing up, I can remember making so many batches of this dough at one time, for Christmas, and putting it in our big yellow plastic bowl to chill.  I always felt that because my mom and I had made so much, it would be okay to sneak in and grab a spoonful of dough at a time to eat.  Oh yummy!

Ingredients

  • 1 cup soft butter
  • 1/2 cup sifted powdered sugar
  • 2 1/4 cups sifted flour
  • 3/4 cup finely chopped nuts
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Directions

Mix together soft butter, powdered sugar and vanilla.  Sift together and stir in flour and salt.  Mix in nuts.  Chill dough.  Roll into 1 inch balls.  Place 2 1/2 inches apart on ungreased baking sheet.  Bake until set, but not brown.  While still warm, roll in powdered sugar.  Cool and then roll in powdered sugar again. Bake at 400 degrees for 10-12 minutes.  Makes 4 dozen 1 1/2 inch cookies.
