Eggplant Parmesan

Ed D. made this dish for a potluck at Southwest Christian Church one time. It was so good! I was about 12, but I asked for the recipe. I think that I made it once at Grandma’s house. It is a big mess, but the taste is worth it!

Ingredients

  • 2-3 eggplants
  • 1/2 pound Italian sausage
  • 1 large jar of spaghetti sauce
  • 2 containers of ricotta cheese
  • 1 brick of mozzarella
  • 3 eggs beaten in a bowl
  • 1 bowl of flour

Directions

Bake sausage and slice in small pieces when cool. Slice mozzarella in cubes. Peel eggplant and slice it 1/2 inch thick. Dip each piece in egg and then flour. Put oil in sauce pan and sauté eggplant pieces until tender. Take 9×13 baking dish and line bottom with eggplant slices. Layer pan with eggplant, sauce, ricotta (2-3 spoonfuls), sausage, mozzarella, and repeat until pan is full. Try to make at least three layers. Heat oven to 350 and cook for 1 1/2 hours or until brown and bubbly.
