Ingredients
- 1 cup water
- 1/4 cup anise seed
- 2 1/2 cup sugar
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 2 egg whites (large)
Directions
Combine water and anise seed. Bring to a boil, stirring occasionally; boil 5 minutes. Strain and reserve 1/2 cup of the anise flavored liquid, discard the seeds. Over medium heat, stirring constantly, cook sugar liquid, corn syrup and salt until the sugar dissolves and mixture boils. Reduce heat, but continue to boil gently, without stirring to 265º on a candy thermometer (softball). When the temperature of the syrup goes down to 255º on thermometer, beat the egg whites until stiff peaks form. Gradually pour in syrup, beating as you do so until mixture begins to lose its gloss. Drop by teaspoonfuls onto wax paper.
