Mama D’s Swedish Brown Bread

A Sandberg family favorite!

Ingredients

  • 2 cups milk 
  • 1/2 cup sugar                                   
  • 2 cups water 
  • 3/4 cup molasses (Grandma’s Molasses is our favorite brand)                                  
  • 2 teaspoons salt
  • 1 heaping tablespoon shortening
  • 1 yeast cake dissolved in 1/4 cup lukewarm water
  • 6 to 7 cups flour

Directions

Mix all ingredients, except yeast and flour, and let come to a boil.  Let cool until lukewarm.  Then, add yeast and water mixture.  Add enough flour to work the mixture (about 6 to 7 cups).

Allow the mixture to stand until it rises to twice its size.  Work again and let rise again to twice its size.  

Cut the dough into 5 equal parts and knead into loaves.  Let rise again in pans and then bake in a 350 degree oven. 

When loaves are golden brown, coat the tops of the loaves with shortening.  Remove from the oven and empty out of bread pans onto a clean cloth.  Cover with wax paper for 5 to 10 minutes.  Then, remove wax paper and cover with clean cloths.  The wax paper treatment tends to make the crust nice and tender.

(Sorry it doesn’t say how long to bake the loaves.  That would probably depend on the size of the bread pans.  I would guess 20 to 30 minutes.)
